Carrot Spice Muffins
- 3 cups whole wheat flour
 - 2 tsp. baking soda
 - 2 tsp. baking powder
 - 1 tsp. ground cinnamon
 - ½ tsp. ground nutmeg
 - ¼ tsp. ground ginger
 - ¼ tsp. ground allspice
 - ½ cup honey
 - 2 eggs
 - 1 cup yogurt or whey
 - 2/3 cup olive oil or melted butter
 - 1 tsp. vanilla
 - 3 cups grated carrots
 - 1 cup raisins
 - 1 cup chopped nuts (optional)
 
Measure dry ingredients into a large bowl. Stir in raisins. In a separate bowl mix the wet ingredients with carrots and nuts. Add to dry mix, stirring only until flour is moistened. Place in greased muffin tins and bake for 10-15 minutes at 400 degrees. Makes 18-24 muffins. Excellent hot or cold.
